This Week's Country Garden Harvest

Two buckets of tomatoes, masses of squash, several zucchinis, more capsicums than I can contemplate what to do with, the first corn, heaps of basil, a couple of cucumbers, celery, radish, rocket... and then I stopped looking  :)

    How about some roasted capsicum and tomato sauce for the freezer. You could do a really big batch and it doesn't take much of your time, just let it cooked down for a while in the oven.

    1. That's a great idea Barbara, I'll give it a go. Those capsicums are really sweet when they are roasted.

  2. I do like the idea of more capsicums than I know what to do with. Capsicums are one vegetable I've never managed to have a glut of. But then again it is one of the few veg the whole family will eat.

    1. Maybe we should do a vegie swap given that we seem to keep having gluts of different things?

  3. Yum. My veggie garden has been somewhat of a disappointment. Too many creatures out there hungrier than me it would seem. Got to love a good glut after all the effort that goes in. Barbara's idea sounds great and the results were fantastic, great job
